- 1" ginger
- 1 cup olive oil
- 2 tablespoons roasted sesame oil
- Juice of 1 lime
- 1/4 cup of white miso
- 1/4 cup of maple syrup
- 2 tablespoons high quality shoyu or soy sauce
- 1/3 cup water
For the Noodles:
- 2 small zucchinis sliced with a veggie pealer
- 1/2 red pepper, sliced into matchsticks
- 1/2 carrot sliced into matchsticks
- 1/2 cucumber grated or pealed into long strips
- Scallions of green onions for garnish
I also personally really like adding mug beans to this recipe.
